The culinary team at Greystone creates menus and meals that are as memorable as they are flavorful, working with fresh, in-season ingredients whenever possible. The team’s vision and talents, coupled with ongoing feedback from Members, make the dining experiences at the Club unique and always evolving.
Cellar 91 is perfect for any family meal. Its casual atmosphere strikes people as soon as they enter. It’s always a breeze finding meals to please any palate. From pizzas to fish or carne asada tacos, to fried chicken and waffles to a kids’ menu that consistently gets rave reviews, this is a restaurant that aims to please everyone in the family every time out.
For a more upscale meal, Aqua (which opened in the newly renovated Legacy Clubhouse last Fall) offers some of the freshest seafood available anywhere in Alabama.
“We have a great seafood connection out of Panama City,” says Greystone’s Executive Chef Alan Martin. “We buy directly from him. He owns the boats—he’s the fisherman. So we get fresh seafood three times a week driven to our back door, and we can feature that incredibly fresh ocean-to-table food here at the Club.”
Aqua operates Wednesday through Saturday nights, while the Legacy Grill serves Members Thursday through Tuesday. A meal from either Aqua or the Legacy Grill is made even more enjoyable by the sights and sounds of the waterfalls behind the Legacy Clubhouse serving as your backdrop while you dine. Perhaps the main attraction is the new outdoor bar and firepits that members love to frequent.
Chef Martin and his team make the most out of the serene surroundings to give Members unique dining experiences—like dinner on the green, which takes advantage of the dining on the course under stars and bistro lights.
For many special events, “we bring out our big smoker grill, and we grill and prepare the food and plate it right there beside the farm tables and serve it outdoors in this beautiful, beautiful setting,” says Chef Martin.
Other special events that get Members’ mouths watering include the regular wine dinners that feature multiple courses and carefully selected wine pairings. Many families also look forward to the seasonal culinary events, like special brunches for Easter, Mother’s Day, and Santa’s appearances at Greystone. These meals create family traditions and become strong memories in the minds of kids.
Even a specialty coffee or pastry in the morning is handled with care at Greystone. Many Members have made visits to the Founder’s Cafe a part of their daily routines. And for our members who now work remotely, the Cafe is a perfect spot, open seven days a week, overlooking #18 on the Founders Course.
“Members love that they don’t have to go far for some of the best restaurants in Birmingham,” notes Chef Martin about the abundance of options available at the Club.
Greystone Members are a social bunch and frequently rely on the Club’s catering prowess to host all sorts of gatherings and deliver great food. Weddings, anniversaries, birthdays, retirements, and office holiday parties are just a few of the events that Greystone is so adept at throwing for its Members in the various locations around the Club.
Chef Martin notes that “the whole team is what is important for the operation to be successful. Not one individual is greater than the team.”
Food is such an essential part of life, and great food only makes life better. That’s the approach Greystone Members take when it comes to dining, and the Club is happy to deliver.
“I have a passion for food, I have a passion for cooking, and I feel very fortunate that I found that,” says Chef Martin. “I enjoy coming to work every day. … Our number-one concern is Member experience because some of our Members come two or three times a week. You can’t just be good occasionally. You really have to be consistent. … That’s what it’s all about is making the Member experience great.”
